We use not modified PHP versions from PHP developers. The problem here in that compiling PHP 5.x on modern OS version is impossible due to some important libraries incompatibility. So, it is OS and PHP related question but not Plesk. If OS vendors will support PHP 5.x in their latest OSes, we will add their support too.
