Incorporate the default collation setting as a feature in the "Tools & Settings: Database Servers: Database Hosting Settings" section.
It should be a simple matter to incorporate the default collation as a feature in the "Tools & Settings: Database Servers: Database Hosting Settings" section. This also needs to be available as an option when a WordPress site is set up within Plesk.

This KB article talks about Plesk's limitation here:
https://support.plesk.com/hc/en-us/articles/360014490834-How-to-change-default-charset-from-utf8-unicode-ci-to-utf8mb4-unicode-ci-in-MySQL-in-Plesk-for-Linux-By defaults, collation is "utf8" which is "utf8bm3" which is very very obsolete.
Plesk should now use utf8mb4_unicode_ci at least, or utf8mb4_unicode_520_ci when supported. -

Be ble to Change the default MySQL collation on Plesk.
By default every database created through the UI has utf8_unicode_ci.
An option to change this configuration would be helpful.
