1. Off site backup on the fly. Currently offsite backup needs half the disc to be empty to work

   That is so true!

   If needed due to performance and connectivitiy it could also do Split..

   Backup 20% -> SFTP -> Backup next 20% ->SFTP....

   Since Plesk Onyx you will be able to install memcache as a Docker container and configure http(s) proxy rule for it to map to your web app.
